Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 1 cup mixed vegetables (carrots, peas, cauliflower, capsicum), finely chopped
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons pav bhaji masala
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon butter
- Salt to taste
- Chopped coriander leaves for garnishing
- 8 pav (bread rolls)
Instructions:
- Heat butter in a large pan and add minced garlic and grated ginger. Sauté for a minute until fragrant.
- Add chopped onions and cook until they turn translucent. Then, add chopped tomatoes and cook until they become soft and mushy.
- Add the mixed vegetables to the pan and cook for a few minutes until they are slightly tender.
- Mash the boiled potatoes and add them to the pan. Mix well with the vegetables.
- Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together and let it simmer for 10–15 minutes, allowing the flavors to blend.
- Meanwhile, slit the pav rolls horizontally and toast them with butter on a griddle until they turn golden brown.
- Once the bhaji is cooked, garnish it with chopped coriander leaves and serve hot with the toasted pav rolls.
