Pav Bhaji is a popular street food dish from India that originated in Mumbai. It is a delectable combination of a spicy vegetable curry called “Bhaji” and buttery bread rolls known as “Pav.” This dish has gained immense popularity across the country and has become a favorite among food enthusiasts. Here’s a simple and delicious Pav Bhaji recipe that you can easily recreate at home:

Ingredients:

  • 4 medium-sized potatoes, boiled and mashed
  • 1 cup mixed vegetables (carrots, peas, cauliflower, capsicum), finely chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons pav bhaji masala
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon butter
  • Salt to taste
  • Chopped coriander leaves for garnishing
  • 8 pav (bread rolls)

Instructions:

  1. Heat butter in a large pan and add minced garlic and grated ginger. Sauté for a minute until fragrant.
  2. Add chopped onions and cook until they turn translucent. Then, add chopped tomatoes and cook until they become soft and mushy.
  3. Add the mixed vegetables to the pan and cook for a few minutes until they are slightly tender.
  4. Mash the boiled potatoes and add them to the pan. Mix well with the vegetables.
  5. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together and let it simmer for 10–15 minutes, allowing the flavors to blend.
  6. Meanwhile, slit the pav rolls horizontally and toast them with butter on a griddle until they turn golden brown.
  7. Once the bhaji is cooked, garnish it with chopped coriander leaves and serve hot with the toasted pav rolls.
