Ingredients:

  • 1 cup cashews (soaked in warm water for 2 hours)
  • 2 medium-sized onions, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons ghee or vegetable oil
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1/2 cup fresh cream
  • Salt to taste
  • Chopped coriander leaves for garnish

Instructions:

  1. Drain the soaked cashews and blend them into a smooth paste. Set aside.
  2. Heat ghee or vegetable oil in a pan over medium heat. Add cumin seeds and allow them to splutter.
  3. Add the chopped onions and sauté until golden brown.
  4. Stir in the ginger-garlic paste and cook for another minute.
  5. Add the tomato puree and cook until the oil separates from the mixture.
  6. Add turmeric powder, red chili powder, garam masala, and coriander powder. Mix well and cook for a minute.
  7. Pour in the cashew paste and stir until well combined.
  8. Add salt to taste and simmer for 5–7 minutes, allowing the flavors to meld together.
  9. Stir in the fresh cream and cook for an additional 2 minutes.
  10. Garnish with chopped coriander leaves.
